This Mini Boden email is a creative delight!
(1) Love the polka-dot background; great playful backdrop.
(2) The postcard treatment and travel illustrations add texture and depth, making this more than just another "buy this summer stuff" message.
(3) I am especially a fan of the fish and finger-point animations; what a novel way to add movement. The little fish really caught my attention in the preview pane :)!

All the time I read that email design should stay away from being too image-heavy. Yet in many different email creative galleries, I see mostly image-heavy or all-image designs get featured (even though they're beautiful). What's a beginner/intermediate email designer to think?

All-image emails are way easier to put together than those that are mixed. Bandwidth isn't really an issue and its easier to control your message and branding with all-image-based emails. You also skip the hours of testing you need to do when mixing images with text.
Ever try to get an email footer to display correctly in Outlook and Outlook web? Such a pain!
